Commonly referred to as the Florida spiny lobster, the Caribbean spiny lobster inhabits tropical and subtropical waters of the Atlantic Ocean, Caribbean Sea, and Gulf of Mexico. Spiny lobsters, pound for pound, have more meat than New England lobsters. This delicious meat can be used in a variety of recipes, including baked lobster tail, lobster salad and lobster sauce for pasta. Since the meat isn't as sweet and rich as a Maine lobster, recipes that have added flavors and ingredients work well.
