Shepherd's Pie

1 Tablespoon Butter
1 Onion, chopped
¼ cup Parsley, chopped
3 Garlic Cloves, minced
1 tsp. Salt
½ tsp. Black Pepper
1 Tablespoon Flour
1/2 cup canned Crushed Tomatoes
1/2 teaspoon Thyme
½ cup diced Carrots, cooked
½ cup Frozen Peas
1 Bay Leaf
½ cup grated Irish Cheddar Cheese (Dubliner)
1)Preheat oven 350 F. In a large sauce pan over medium heat, heat the butter. Sauté the onion and garlic until wilted. 2) Add ground beef, thyme, bay leaf and sauté for 10 minutes. Stir often, breaking lumps in the ground beef. Add diced carrots and peas. Season with salt and pepper and stir. 3) Sprinkle cooked beef with flour, add crushed tomatoes and parsley and simmer ground beef for 10 minutes. Add parsley. 4) Heat the mashed potatoes according to package. 5) Butter a casserole or baking dish. Spoon cooked beef into the bottom half of the dish. Top with mashed potatoes and smoothen the surface. Sprinkle 1 Tbsp. of cheese on top and bake uncovered for 25-30 minutes. Allow to cool 15 minutes before serving.
