Sautéed Ibérico Secreto with Lemon & Thyme | Wild Fork
Pan-sear premium Ibérico secreto with lemon and thyme for a tender, aromatic dish that lets the exceptional quality of the cut shine.

INGREDIENTS
2 sprigs fresh thyme, leaves picked and minced
1 lemon, cut in half
1 teaspoon Spanish paprika
1 tablespoon Spanish olive oil
Kosher salt
LET'S GET COOKING!
Take pork out of the refrigerator 1 hour before cooking to bring to room temperature. Use a paper towel to pat dry the pork steak on both sides. Season with salt, pepper and paprika.
In a heavy nonstick skillet or a cast iron pan heat the oil over medium high heat.
Sautee the pork 3 minutes per side to develop a good crust. Remove pork from pan and place on a serving platter and let it rest for 5 minutes.
Slice across the grain into ½ inch strips, sprinkle some thyme and lemon juice over slices and enjoy.
