INGREDIENTS
1/2 Red Onion, cut in quarters and finely sliced
1/2 Cup Freshly Squeezed Lime Juice
½ Jalapeño Pepper, thinly sliced
2 Garlic Cloves, finely chopped
¼ Cup Fresh Cilantro Leaves
1 small Sweet Potato
LET'S GET COOKING!
In a glass bowl, mix lime juice, jalapeño, garlic and salt. Add sliced red onion and let marinate for 10 minutes.
Boil sweet potato in salted water until tender. Drain and let cool under cold water. Peel and slice.
Add shrimp to marinate, red onions and cilantro leaves. Refrigerate until ready to serve.
Serve in a bowl or deep platter with sweet potatoes on the side.
