¼ cup celery, finely minced
¼ cup high quality mayonnaise
½ tsp. fresh lemon juice
2 New England-style hot dog rolls
5tbs very soft salted butter
1 tsp. chopped chives for garnish
LET'S GET COOKING!
Mix the lobster meat, minced celery, mayonnaise, and lemon juice in a medium sized bowl.
Refrigerate or keep cold until ready to use.
Heat a skillet over medium low. Spread butter inside the rolls and place the rolls butter side down into the skillet. Heat until slightly toasted.
Remove from skillet and place on a serving platter.
Fill each roll with a mound full of lobster meat. Garnish with chive and a lemon wedge on the side.
