Meatloaf with Honey BBQ Glaze

Meatloaf:
6 oz. Oats
6 oz. Frozen Chopped Spinach, thawed
1 Carrot, peeled and grated
½ Onion, finely chopped
3 Cloves Garlic, minced
¾ tsp. Thyme
¾ tsp. Oregano
1 Red Bell Pepper, diced
tsp. Paprika
1 large egg or 2 small
Honey BBQ Glaze:
½ Cup Ketchup
1 Tbsp. Sriracha
1 tsp. Worcestershire Sauce
2 Tbsp. Honey
Mix all ingredients in a bowl and reserve until ready to use.
Preheat oven to 350°F.
Mix all ingredients for Honey BBQ Glaze in a bowl. Reserve until ready to use.
Mix all meatloaf ingredients a bowl. Pack mixture in a 10” loaf pan and cover with aluminum foil. Bake for 50 minutes.
Uncover and top with Honey BBQ glaze. Bake for an additional 10-15 minutes or until thermometer reaches an internal temperature of 160°F.*
*USDA recommends cooking ground meats to a minimum internal temperature of 160°F
