Madagascar Peppercorn NY Strip Steak | Wild Fork

INGREDIENTS
Steaks:
1 Tbsp. Light Olive Oil
WFF Himalayan Pink Salt, to taste
Madagascar Sauce:
1 Tbsp. Green Peppercorns, crushed
2 Tbsp. Butter, unsalted
¼ Cup Sherry
½ Cup Beef Stock or Consommé
¼ Cup Heavy Cream
LET'S GET COOKING!
Preheat oven to 400°F. Season steaks with salt and pepper.
Heat an oven-proof skillet with olive oil over medium high heat.
Sear the steaks on both sides for approximately 3-4 minutes or until browned. Transfer the skillet to oven and roast for 4 minutes or until the internal temperature is 125°F -130°F* for medium rare.*
Combine butter, green peppercorns, sherry, stock and heavy cream in a sauce pan and simmer until sauce coats the back of a spoon. Keep warm.
Serve steaks with sauce on the side.
*USDA recommends cooking beef to a minimum internal temperature of 145°F
