INGREDIENTS
Tbsp. Olive Oil
1/2 Medium Onion, diced
2 large Gold Potatoes, cut into 1/2” rounds
1 Granny Smith Apple, diced
1 Cup White Wine
1 Cup Drained Sauerkraut
1 Tbs White Wine Vinegar
1 Tsp Mustard
1 tsp. Caraway seeds
1/4 C Chopped Parsley
LET'S GET COOKING!
Preheat oven to 400° F.
Heat 2 tsp. of oil in a large oven able skillet under medium-low heat. Add onion and cook for 5 minutes, stirring occasionally. Add caraway seeds, diced apple and white wine. Increase heat to medium- high and cook until wine evaporates, about 5 minutes.
Add sausage, sauerkraut, mustard and vinegar and season with salt and pepper. Stir to combine.
Rub potatoes with remaining oil and season with salt and pepper. Place potatoes on top of sausage mix in skillet and roast for 45 min. or until potatoes are golden brown. Garnish with parsley and serve.
