6 oz. Oats
6 oz. frozen chopped spinach, thawed
1 carrot, peeled and grated
½ onion, finely chopped
3 cloves garlic, minced
3/4 teaspoon thyme
3/4 teaspoon oregano
1 red bell pepper, diced
½ teaspoon each black pepper and paprika
2 teaspoons salt
1 large egg or 2 small
½ cup ketchup
1 TBS. Sciracha
1 teaspoon Worcestershire Sauce
2 TBS Honey
LET'S GET COOKING!
Preheat oven to 350F.
Mix all ingredients of meatloaf in a bowl. Pack mixture in a 10 “loaf pan and cover with aluminum foil.
Bake for 50 minutes. Uncover and top with Honey BBQ glaze.
Bake for an additional 10-15 minutes or until thermometer reaches an internal temperature of 160F.
*USDA recommends cooking ground meats to a minimum internal temperature of 160°F
