2 Tbsp. Light Olive Oil
1 Onion, chopped
1 Green Pepper chopped
¼ Cup Cilantro, chopped
3 Garlic Cloves, minced
1 tsp. Dried Oregano
½ tsp. Ground Cumin
2 Tbsp. Tomato Paste
In a large sauce pan over medium heat, heat the oil and sauté the onion, green pepper and garlic for 2-3 minutes or until vegetables are wilted.
Add cilantro and ground beef and sauté for 10 minutes, stirring often to separate the ground beef. Add salt, pepper, oregano, ground cumin, and tomato paste and simmer ground beef for an additional 10 minutes. *
Mix ins: : (optional) You may add the following diced, cooked ingredients to your finished ground beef: 1 potato, 1 hard-boiled egg, 1 TBS. sliced green olives, 1canned pimento pepper. You may also use this as a filling for empanadas or roasted bell peppers. *USDA recommends cooking ground beef to a minimum internal temperature of 160°F
