LET'S GET COOKING!
Preheat oven to 400 °F. Brush both sides of the bread slices with 2 tbsp. of olive oil. Season with salt and pepper and bake in a sheet pan until toasted.
In a large pot over medium heat, sauté the shallots and garlic with 2 Tbsp. of remaining olive oil. Raise the heat to medium high, add wine, salt, black pepper and bring to a simmer. Add mussels, cover and cook for 4-6 minutes or until mussels are plump and hot. Stir in parsley, butter and divide in bowls. Serve with toasts on the side.
