Coarse Sea Salt and Black Pepper, to taste
1 Tbsp. Olive Oil
2 oz. unsalted Butter, room temperature
2 Tablespoons Crumbled Blue Cheese (Maytag, Danish Blue or Gorgonzola)
1 Garlic Clove, minced
½ teaspoon fresh thyme, chopped
LET'S GET COOKING!
In a small bowl, beat butter until light and airy. Add ingredients for flavored butter and mix. Place in a plastic wrap and roll into a cylinder twisting the ends to seal. Refrigerate until ready-to- use.
Preheat oven to 400F.
Heat oil in a sauté pan over medium high temp. When sizzling, sear the filet mignons on one side for 2 minutes. Turn, lower to medium and continue cooking for 2 additional minutes. Place in the oven and continue to cook for 7-10 minutes or until internal temperature reaches 125 F for medium rare. Place a slice of the butter on top, cover with foil and let rest for 5 minutes before serving.
