INGREDIENTS
¼ Cup AP Flour
¼ Cup Yellow Cornmeal
½ tsp Paprika
¼ tsp Dried Parsley
Egg Wash:
1 Egg
1 TBS Milk
For the Mayo :
½ Cup Mayo
1 Lime , juiced
1 TBS Ketchup
1-2 TBS Sambal Oelek or favorite hot sauce
In a small bowl combine all ingredients , whisk until well blended. Refrigerate until ready to serve.
LET'S GET COOKING!
In a small bowl whisk together the egg and milk.
In another bowl mix together the spices with the flour and cornmeal.
Dip an oyster in the egg wash letting excess drip off. Place in bowl with cornmeal mix and coat on both sides. Place on a plate and repeat with remaining oysters.
Fill a Cast Iron pan with 2 inches of oil and heat to 350°F. Fry the oysters in batches of 5 or 6 at a time, 2 minutes per side or until golden brown.
Remove from pan with a slotted metal spoon and place on a paper towel covered plate.
Serve with Chile -Lime Mayo on the side for dipping.
