INGREDIENTS
Salt and pepper to taste
2 tablespoons olive oil
Chinese-style Hoisin Sauce:
1/4 cup soy sauce
¼ cup apricot preserves
1/2 cup hoisin sauce
¼ ketchup
¼ cup sherry
1 tablespoon sesame oil
Cut Scallions for garnish
LET'S GET COOKING!
Preheat oven 350 F. Season pork tenderloins on both sides with salt and pepper.
In a large skillet, heat the olive oil over medium heat. Add pork tenderloins and sear on both sides until golden-about 5-7 minutes per side. Transfer to a baking dish, cover with foil and place in the oven. Roast for 20 minutes.
While pork is in the oven, place ingredients for the sauce in a bowl and whisk until blended. Add to the skillet and cook over medium heat until thick and syrupy.
Remove pork tenderloin from the oven, uncover and pour sauce over the tenderloins. Continue roasting uncovered for 10-15 minutes or until internal temperature reaches 145-150 F.
Remove pork from oven and place tenderloins in a platter. Slice and serve with sauce from the baking dish over the pork medallions. Garnish with scallions.
