1 Tbsp. Vegetable Oil
2 Garlic Cloves, diced
¼ Cup Fresh Cilantro
5 Cups Beef Broth
1 (8 Oz.) Can Tomato Sauce
1/4 tsp. Ground Annatto
1 tsp. Ground Cumin
2 Medium Potatoes, peeled and cubed
1 Medium Carrot, sliced
In a medium braising pot, heat the oil over medium heat.
Season the beef stew meat with salt and pepper place in hot oil. Sear until evenly browned on all sides.
Add the pepper trio, garlic and cilantro. Stir fry for 5 minutes and add the rest of ingredients except for the potatoes and carrots.
Reduce heat to medium low and cover. Simmer for one hour and 15 minutes.
Add the carrots and potatoes and simmer for 10 -15 minutes until vegetables and meat are tender.
(For Slow Cooker, place all ingredients in crock pot and cook in low for 8 hours).
