Beef Tenderloin Tips with Shiitake Mushrooms and Roasted Shallots
Our bite-sized perfection Tenderloin Tips pair nicely with mushrooms and shallots to be the makings of a houeshold favorite.

INGREDIENTS
- 2 Tbsp. Butter or Olive Oil 
- 4 Oz. Fresh Shiitake Mushrooms, whole 
- 2 Fresh Bay Leaves or 1 Dry Bay Leaf 
- 6-8 Small Shallots, peeled 
LET'S GET COOKING!
- Season shallots with olive oil, salt and pepper. Roast the shallots for 15-20 minutes in a 400° F oven or until tender. Keep warm until ready to serve. 
- While shallots are roasting, season tenderloin tips with salt and pepper. 
- Heat a heavy skillet on medium high with one Tbsp. butter or olive oil. Sear the tips for 5 minutes stirring often so they brown evenly on all sides. Transfer to a bowl and cover with aluminum foil. 
- In the same pan, add remaining Tbsp. of butter or olive oil, sauté the shiitake mushrooms for 30 seconds, season with salt and pepper. Add bay leaves, seared tenderloins and stir-fry for 1-2 minutes.* Serve with roasted shallots. 
*USDA recommends cooking beef to a minimum internal temperature of 145°F
