Bang Bang Alligator Tenderloins with Panko Crust

2 Cups Fine Panko Breadcrumbs
2 eggs, beaten
½ Cup flour
Salt, to taste
Deep Frying Oil
Chopped chives, as garnish
Bang Bang Sauce:
½ Cup Mayonnaise
¼ Cup Sour Cream
¼ Cup Sweet Thai Chili Sauce
1 tsp. Sriracha
Cut Alligator tenderloin into ¾” x ¾” cubes. Season with Blackened Seasoning and salt.
Place flour, eggs, and breadcrumbs in separate bowls.
Coat each tenderloin in flour, then beaten eggs, and finally in breadcrumbs. (Tip: You may prepare this ahead of time and refrigerate).
Prepare Bang Bang Sauce by mixing all sauce ingredients in a bowl and refrigerate until ready to use.
Heat oil in a deep fryer to 360°F. Fry the breaded alligator for 3-3 ½ minutes.
Drain on a paper towel. 6. Transfer to a serving dish and drizzle sauce over. Sprinkle chives as a garnish.
