Known locally in New England as the "sirloin tip" and elsewhere as the "faux hanger," flap meat comes out beautifully when grilled – tender, juicy, and packed with that punchy flavor that makes a steak a steak. As part of our USDA Choice program, it’s the second highest-grade beef that we offer, with a little less fat marbling than Prime. Choice is very nice quality meat, particularly when cut from the loin and rib areas. Beef flap meat is a versatile meat that you can't beat for the price. Excellent grilled or seared, this cut does what you want – sliced, cubed or whole. Add a marinade to really make it shine! At Wild Fork Foods, we predominantly source our beef from Colorado and Nebraska, where the cold weather attracts some of the best-quality English and continental breeds, such as Angus, Hereford and Limosime. Close proximity to these states guarantees that our cattle enjoy high-quality feed year-round. This product is blade tenderized.
