Beef Small Intestines

You may not see beef small intestines on American menus very often, but they're very popular in Latin American cuisine, where they're known as "chinchulines". They're typically grilled and sliced into thinner pieces. The fork-tender meat is typically served as an appetizer. There's a little bit of fat muscle in the middle, which makes them soft and moist.
