You may have heard this cut referred to as the “Kansas City strip.” This moderately tender, boneless steak offers deep, buttery flavor in every bite of nicely marbled, finely textured meat. Use it as an excellent alternative to ribeye, which has considerably more fat. Grill it, pan sear it or roast it in the oven. Just don't overdo it! A cut this fine can speak for itself.
USDA Choice is the second highest-grade beef that we offer, with a little less fat marbling than Prime. Choice is very nice quality meat, particularly when cut from the loin and rib areas.
