The breast meat of Pekin duck is lean and has a subtle, light flavor that comes through best when it's cooked medium rare. Before roasting or grilling, score the thin fat layer in order to impart its flavor on the tender, delicate breast meat. After cooking, slice the breast thin against the grain and serve the slices on a salad, a pizza or a pasta dish. Culver's Pekin ducks are raised without antibiotics in open barns at family-owned farms.
