Known locally in New England as the "sirloin tip" and elsewhere as the "faux hanger," flap meat comes out beautifully when grilled – tender, juicy, and packed with that punchy flavor that makes a steak a steak. As part of our USDA Choice program, it’s the second highest-grade beef that we offer, with a little less fat marbling than Prime. Choice is very nice quality meat, particularly when cut from the loin and rib areas.
