Instructions
- In a glass bowl, mix lime juice, jalapeño, garlic and salt. Add sliced red onion and let marinate for 10 minutes.
- Boil sweet potato in salted water until tender. Drain and let cool under cold water. Peel and slice.
- Add shrimp to marinate, red onions and cilantro leaves. Refrigerate until ready to serve.
- Serve in a bowl or deep platter with sweet potatoes on the side.
