Recipe:Grilled Berkshire Pork Chop with Pineapple

  1. In a small bowl, combine olive oil, garlic cloves, sea salt, pork seasoning, black pepper, and thyme leaves. Rub pork on both sides with seasoning. Marinate in the refrigerator at least ½ hour.
  2. Preheat grill to medium high heat. Place marinated pork chop on the grill and cook 7-9 minutes on each side alternating sides every 3-4 minutes being careful not to burn.
  3. Cut the fresh pineapple in spears, sprinkle with Spicy Mojo Seasoning and place on the grill until slightly charred. Cut into 1 “ pieces and serve over pork chops.
  4. *USDA recommends cooking pork to a minimum internal temperature of 145 °F.
