Recipe:FILET MIGNON WITH BLUE CHEESE BUTTER

  1. In a small bowl, beat butter until light and airy. Add ingredients for flavored butter and mix. Place in a plastic wrap and roll into a cylinder twisting the ends to seal. Refrigerate until ready-to- use.

  2. Preheat oven to 400F.

  3. Heat oil in a sauté pan over medium high temp. When sizzling, sear the filet mignons on one side for 2 minutes. Turn, lower to medium and continue cooking for 2 additional minutes. Place in the oven and continue to cook for 7-10 minutes or until internal temperature reaches 125 F for medium rare. Place a slice of the butter on top, cover with foil and let rest for 5 minutes before serving.
