What is the difference between wet-aged and dry-aged?

Dry-aging is when whole beef cuts are hung in open air at a temperature just above freezing and left over age for several weeks. Dry-aging slowly dehydrates the meat. All of our meat is wet-aged for 17 days to preserve moisture and increase tenderness to give you the most unique eating experience ever.
