How do you age your meat and for how long?

Our meat is wet-aged meaning each cut is vacuum-sealed in plastic and kept refrigerated while the aging takes place. This gives enzymes time to tenderize the meat. Our beef is aged for a minimum of 17 days and our pork is aged for a minimum of 8 days.
