FLAVOR
This line has a slight marbling, and therefore it may not be as juicy as other offerings. This leaner grade of beef, however, offers a great flavor that is best coupled with other ingredients.
TEXTURE
Since this grade has less marbling and fat than the other beef grades the texture more course unless introduced to some form of liquid or sauce. We enhance and/or tenderize many of these cuts with a vegetable marinade for added tenderness and flavor.
COOKING APPLICATION
Inspected grade is best for marinating or braising. You may also grill or cook in cast iron and air fryer.

FLAVOR
This beef grade boasts moderate marbling and therefore a great flavor. +/- 70 - 80% of USDA graded beef falls in this marbling score. You can’t go wrong with this. If you want the extra punch, you’ll have to go to prime or wagyu.
TEXTURE
Given its exquisite marbling this grade will have a very tender and juicy flavor particularly in the middle cuts from the loin or the rib.
COOKING APPLICATION
Middle meats in this grade are suited for a quick grill or broil or pretty much any cooking method of your preference. The front quarter (chuck and brisket) and back quarter (rounds) will be best for braising, roasting or any type of slow cooking.

FLAVOR
A prime beef grade indicates the beef is produced by well-fed cattle which contributes to an abundance of marbling making the flavor more forward and present.
TEXTURE
This grade is so highly sought after that a majority of steaks and roasts you buy in hotels or high-end restaurants are made from this grade of beef. They buy this grade because of its consistent and high-quality texture. In terms of USDA Graded beef, it doesn’t get better than Prime.
COOKING APPLICATION
Highly desired for grilling and roasting. Some choose this flavorful beef for smoking. Regardless of the cut, you’ll impress yourself and your guests with this abundantly marbled beef. beautiful texture and exquisite flavor.

Wagyu
BMS: 6-7

In Wild Fork we source BMS 6-7 which offers a bit more marbling than prime. This breed develops great marbling scores, with a characteristic umami flavor. You’ll impress yourself and your guests with this flavorful beef.
TEXTURE
All feed components are mixed on site under nutritional guidance to ensure animal's exact needs are met. This care leads to high marbling score with a characteristic umami flavor and extremely tender.
COOKING APPLICATION
To savour the delicacy of this line, we recommend a cast iron skillet or controlled cooking in Sous Vide. Grill masters will want to grill it, and they’re in for a treat.

A5 Wagyu

FLAVOR
Although not technically a US grade the A5 Wagyu offers the most unique flavor out of our selection here at Wild Fork. Sourced exclusively from the Miyazaki region in Japan, the A5 at Wild Fork has a beautiful marbling that allows for a more uniform and deeper flavor making it a one-of-a-kind stand-alone type of beef.
TEXTURE
A5 Wagyu has the highest level or marbling out of all the beef grade selections. The fat/marbling in this line has a lower melting point, leading it to literally melt in your mouth as you enjoy the unique umami flavors.
COOKING APPLICATION
Wagyu is best done on a cast iron skillet or pan. Don’t let it sit there too long. As the fat melts, the beef will cook in it’s own fat/marbling juices.
